Beet Salad

Beet in the garden.

Harvested.

Three beets and an onion.

Washed and ready to go into the oven to roast for about 45 minutes.

We added the "beet greens" to a field salad, cut up the roasted beets, and topped with feta cheese & a homemade honey vinegarette.  Yum!
